Pyengana Clothbound Cheddar is one of Australia’s oldest specialist cheeses, established at the turn of the century and was this year awarded as a finalist in the 2017 Delicious Magazine Annual Food Produce Awards.  After draining and hand-tearing, the salted curds are hooped in cloth bags and are pressed overnight using a nineteenth-century mechanical press. It’s hand made nature means that variations in character will appear according to the season when the cheese was made. General aromas are reminiscent of summer grass, herbs and honey.
