Il Forteto (the fort), is a commune tucked away in the Muggelano Valley, 30 kilometres from Florence. This pecorino cheese made from sheep’s milk has small pieces of white truffle scattered throughout it’s pâté. The balance of flavours delivers a slightly sour, truffle rich earthy profile. Its 12 month minimum aging process delivers a firm texture but is still moist and irresistible in the mouth.
