Named after the cheesemaker’s husband who is a lover of white mould ripened cheese, the St Julian is an adaptation of a St Marcellin from Lyon. Resembling a small Camembert, the cheese is ripened using both white mould and yeast. The palate is delicate and mousse like in texture and pairs beautifully with one of our natural wines from the region.
